Simple Ham Cups Breakfast Snack
This ham and egg cups make the perfect on-the-go energy food. They are great to have for breakfast or as a snack that is packed with protein and fiber. Make a dozen to enjoy throughout your week.

Ingredients
- 2 teaspoon olive oil
- 2 clove garlic, minced
- 1 yellow onion, chopped
- 24 slices of nitrate free ham
- 2 cup broccoli, steamed and chopped
- 1/2 cup shredded cheddar cheese
- dash of salt and pepper
- 24 eggs
Instructions
- Preheat oven to 350 degrees F. Lightly spray a muffin pan with nonstick cooking spray and set aside.
- In a medium sized skillet, heat the olive oil over medium heat. Add the garlic and onions, cooking until tender.
- Add the steamed broccoli, cheese, salt and pepper. Mix until fully combined. Remove from heat.
- Using kitchen scissors, make a slice to the center of each piece of ham, then fold into a cone shape in each muffin cup. Fill halfway with the broccoli mixture.
- Crack an egg into each ham cup. Bake for 16-20 minutes, or until the edges of the ham are crispy.
