
Seasonal Lentil Soup
 There’s nothing better on a cool autumn day that had a soothing bowl of hot soup. This recipe requires very little prep work and will give you a delicious meal in about 30 minutes. Serve with a salad for a complete meal.

Ingredients
- 3 1/2 cups water
 - 1 1/4 cup dried red lentils
 - 1/2 large onion, minced
 - 1/2 teaspoon turmeric
 - Large pinch of cayenne pepper
 - 2 tablespoons fresh lemon juice
 - 1/2 teaspoon ground cumin
 - Salt and pepper
 
Instructions
- Combine water, lentils, onion, turmeric, and cayenne pepper in a large soup pot and bring to a boil.
 - Reduce heat, partially cover, and simmer until lentils have disintegrated, about 30-40 minutes.
 - Stir in lemon juice, cumin, salt and pepper to taste.
