Fiber Filled Zucchini Pasta with Turkey

Making noodles out of zucchini is a great way to cut back on carbs and still enjoy your favorite pastas. All you need is a spiral slicer, which is a small investment that will create countless delicious dinners for you and your family. These fiber-filled noodles combine with ground turkey for a tasty new twist on spaghetti.

Ingredients

  • 2 zucchini, ends trimmed and run through a spiral slicer
  • 1/2 teaspoon olive oil
  • 1/4 cup chopped onion
  • 1 1/2 garlic cloves, minced
  • 1/2 (20oz) package lean ground turkey
  • 1 cups spaghetti sauce
  • Salt and pepper to taste

Instructions

  • Place the spiral-sliced zucchini in a large bowl and set aside. 
  • In a medium sized skillet heat the oil. Add the onion and garlic and sauté until soft. 
  • Add the turkey to the skillet and cook until fully browned. 
  • Add the spaghetti sauce and mix until fully incorporated. Remove from heat. 
  • Mix the sauce with the zucchini noodles in the large bowl and serve.
