Great Combination Lentil Fruit Salad
This recipe gives a light and refreshing side dish or light meal for the summer months using its freshest ingredients. The combination of plump lentils with chunks of fresh fruit and a splash of balsamic vinegar gives you a new and different flavor that will fill you up without weighing you down.

Ingredients
- 2 cups black lentils, cooked
- 2 medium mangos, cut into 1 inch cubes
- 2 medium tomato, chopped
- 12 medium strawberries, chopped
- 2 tablespoons red onion, finely chopped
- 2 tablespoons balsamic vinegar
- Salt and pepper to taste
Instructions
- Place the lentils in a Large bowl.
- Before you put the all the fruit into the bowl with lentils, make sure to chop the fruit and onions.
- Add the vinegar to the lentils and fruit, mix until well combined.
