Spinach is an extremely nutrient dense food, and makes a great base to this light and refreshing salad for the summer season. The fruit and nuts add fiber, flavor and healthy fats. Combine that with a light and flavorful raspberry vinegar dressing and you’ll start craving this salad daily.

Ingredients

  • 3 lbs minced, grass-fed beef
  • 3 Tablespoons tomato paste
  • 12 oz can of tomato sauce
  • 1 1/2 Tablespoon chili sauce
  • 1 1/2 cup cherry tomatoes, halved
  • 3/4 teaspoon sea salt
  • 6 zucchini
  • 1/3 cup fresh parsley

Instructions

  • Combined the spinach, oranges, cucumbers, macadamia nuts, sunflower seeds, poppy seeds and strawberries in a bowl. 
  • Add the vinegar and toss well.
