Simple Spinach Salad

Spinach serves as the base for this light and delicious salad. High and protein and topped with your own homemade dressing, it lends a lot of flavor without a lot of calories.

Ingredients

  • 9 cups organic baby spinach
  • 6 hardboiled eggs, chopped
  • 9 pieces bacon, crumbled
  • 1 1/2 cup cherry tomatoes, halved
  • 1 1/2 teaspoon olive oil
  • Juice from one lime
  • Dash of pepper

Instructions

  • Combine the spinach, eggs, bacon and tomatoes in a large bowl.
  • In a medium bowl whisk the olive oil, lime juice and pepper.
  • Pour the dressing over the salad, mix and serve.
