Vegetable Filled Lime-Spiked Asparagus

 Asparagus is an excellent vegetable choice that is filled with folic acid, and this recipe calls fresh squeezed lime that makes it light and refreshing. Ready in only 15 minutes, this is the perfect side for your lean protein on busy weeknights.

Ingredients

  • 2 teaspoon olive oil
  • 6 garlic cloves, minced
  • 2 shallot, minced
  • 2 bunch fresh asparagus spears, tough ends trimmed
  • Juice from 1/2 lime
  • Salt and pepper, to taste

Instructions

  • In a large skillet heat the oil over medium heat. Mix in garlic and shallot, and cook for a couple of minutes. 
  • Add the asparagus spears, cook until tender, about 5 to 7 minutes. 
  • Squeeze lime juice over asparagus and season with salt and pepper.
