Ingredients

  • 2 teaspoon olive oil
  • 2 cup fresh broccoli, cut into small pieces
  • 10 egg whites
  • 8oz grilled or smoked salmon, separated into small pieces
  • dash of salt and pepper

Instructions

  • Heat olive oil over medium heat in a frying pan. 
  • Add broccoli to the frying pan and stir until it begins to soften, about 3-4 minutes.
  • In a small bowl, mix the egg whites and pour over the broccoli
  • When the eggs begin to spolidify, about 1 minute, add the salon and cook until the eggs are fluffy and fully cooked, stirring occasionally. 
  • Add salt and pepper to taste.
